Once the ham has been placed on the conveyor belt, a photocell detects it and the dispenser incorporates the necessary amount of nitrifying agent into the piece as it enters the drum. Once inside, thanks to the design of the blades and the rotating movement of the bass drum, the hams are gently rotated on themselves, rubbing against the inner wall and avoiding blows between them while the nitrifying agent is evenly distributed over their entire surface.
